Breakfast Pizza

Yields 1 Serving

Ingredients

  • ½ whole grain English muffin
  • 2 tablespoons tomato sauce or salsa
  • 1 egg
  • 1 tablespoon milk
  • 2 slices of roasted red pepper
  • Shredded cheese
  • 1 precooked breakfast sausage link
  • Salt and pepper

Instructions

  • Step 1

    Preheat oven to 425 degrees F.

  • Step 2

    Beat egg and milk until well mixed.

  • Step 3

    Dice one slice of roasted red pepper, add to mixture.

  • Step 4

    Spray a microwave-safe dish with nonstick cooking spray and cook egg mixture on high for 2 minutes, stirring after each minute (times may vary). Add salt and pepper to taste.

  • Step 5

    Cook breakfast sausage link according to package directions, slice.

  • Step 6

    Place English muffin on baking dish, spread tomato sauce on top, add egg, and top with shredded cheese.

  • Step 7

    Now bring your pizza to life! Use two sausage slices as eyes, one for the nose, and the remaining red pepper slice as the mouth. Place in the oven until cheese is melted and English muffin gets crispy. Bravo!
